A market mainstay, greens are a perennial favorite. From crisp salads to hearty stews, there’s something for everyone year-round. You’ll find plenty of familiar favorites, but don’t miss out on lesser known leaves. Discovering new varieties is one of the best parts of the farmers market.
Choose leaves that are vibrant, free of any yellowing or wilting.

Leafy greens encompass a large variety, but we loosely put them into two categories: salad and cooking greens. Of course, there aren’t really any hard and fast rules here–a raw kale Caesar has become a new classic, Little Gems are glorious tossed in a hot wok, and escarole is just as comfortable in a salad bowl as it is in a soup pot.
Salad Greens
Arugula, bibb, butter, endive, frisee, green leaf, iceburg, little gems, mizuna, mache, romaine, watercress
Cooking Greens
Bok choy, broccoli rabe, cabbage, chrysanthemum leaves, collard greens, escarole, kale, mustard greens, nettles, spinach, Swiss chard, tatsoi
-
Keep leafy greens in the refrigerator, preferably in airtight storage like a reusable container or resealable plastic or silicone bag. Tuck a paper or thin cotton towel in to absorb excess moisture.
If you like, you can wash your greens first. Just make sure they are as dry as possible before storing long-term in the refrigerator.
Note that while mesh and muslin bags are excellent for shopping at the market, they aren’t optimal for storing your greens once home. Greens will dry out and wilt in permeable containers. If your greens do wilt, they can be revived with a soak in cold water.

Peak-season farmers market tomatoes are a completely different animal from the off-season supermarket varieties. There are over 25,000 varieties of tomatoes, each with their own unique characteristics. The “best” one depends on what you’re making with it, and your personal palate. Ask your farmer if you’re unsure which ones to reach for. They’re deeply acquainted with each one and are happy to introduce you–they might even give you a little taste.
Ripe tomatoes should just barely yield to slight pressure. (Please don’t squeeze!) If you’re not eating them all right away, we recommend choosing a few of varying ripeness. Overripe and “cosmetically challenged” tomatoes are perfect for cooking down into sauces, and often priced a bit lower.

Tomatoes hit their peak in the summer and early fall in Northern California. Some of our producers grow in hoop houses in the off-season.

Store upside down on the counter top. This prevents moisture loss through the stem, and preserves flavors that cold fridge temps can kill.

Peach season is peak season. The farmers market is alive when the peaches are good. Taste your way through the samples to teach yourself about the nuances between varieties. They’re all good, but all slightly different.
Be sure to use gentle hands when picking through the fruit–they’re delicate! Choose peaches that are just barely soft but with deep fragrance. Peaches that are bursting and ready to eat right now are its own pleasure, but can require extra care to transport home without damaging them. Fruits tinged with green aren’t yet ripe. We’d recommend skipping those.

-
Store at room temperature, but skip the fruit bowl. Peaches are delicate, and stacking them causes soft spots and bruising. Instead, store peaches stem side down in a single layer. Room temperature is best to preserve their delicate flavors. But if they’re ripe before you’re ready for them, move them to the refrigerator.

Egg labels can be confusing at the store. You’ve got total transparency at the farmers market. Curious if the eggs for sale are free range or organic? Confused as to what those terms actually mean? Ask the person selling them. You’ll get the lowdown on exactly how the chickens are cared for, likely from the person who is caring for them.

Commercial eggs must be refrigerated. Eggs purchased from smaller operations are regulated differently. These eggs are often unwashed, leaving the protective cuticle intact. Unwashed eggs can be stored on the counter for weeks. If you’d like to store your farmers market eggs at room temperature, please double check with your farmer that this is safe.
Unwashed eggs can also be stored in the refrigerator for three months. But once they’ve been in the fridge, they’ve got to stay there. You cannot switch back and forth between storing at room temperature and in the refrigerator.
